      Tasting Notes and Description
      Justin represents the 13th generation to operate the family estate of 17 hectares, from Santenay to Savigny-les-Beaune. Aware of the exceptional nature of these terroirs, he puts his know-how at the service of the vines to produce the best wine each year.

      Tasting notes: brilliant colour. Pleasant nose with fruity notes. Round mouth with a beautiful typical volume of Chardonnay.

      Pair with appetisers, fish, seafood, oysters and delicate entrées.

      Serving temperature: 12°C

      Ageing potential: 3 to 4 years

      Age of vines: 25 years

      Grape variety: Chardonnay

      Ageing: Half French oak barrels and half in tanks. No new oak.

      Origin of wood: Allier, Vosges, Bertranges. Wine remained 12 months in barrels and in tanks. Blended before bottling.

      Viticulture Pruning style: Guyot simple. Manual harvest. Green work (de-budding and leaf-thinning)

      Grape sorting: in the vineyard (twice) and in the winery on a sorting table.

      Winemaking: The grapes were pressed upon arrival at the winery. Fermentation took place with a low temperature to preserve all the flavours. Alcoholic fermentation was started in vats, then transferred into barrels. They use only natural yeasts to keep the charm and character of each wine.

      "Our Chardonnay parcels are located on the Peuraine and Saint Martin appellations, southwest of Santenay on the border with the Maranges vineyard. These plots, located in the plains, were mostly fallow until the Girardin started exploiting them. Either these were abandoned after the phylloxera crisis in the 20th century, or they had never been planted with vines. The soil is clay-limestone, with gravel and calcareous sand on the surface. The exposure varies according to the local relief of the plot, but generally it is facing south-east. On tasting, the wine expresses fruity aromas enhanced by a beautiful acid note and above all freshness on the palate."
