    Product Information

    Dressed in purple, this wine displays a nose of morello cherries, violets and gingerbread. Its round and ample flesh is marked by pepper and mocha aromas. The tannins are present but of great finesse. An ideal companion to a rack of lamb with vegetables. Serving temperature, 15-17 °C. A blend of Mourvèdre, Syrah, Grenache, Carignan from schist soils. Vinification began with destemming and manual sorting of the entire harvest. Cold pre-fermentation maceration for 48 hours at 7°C. Fermentation took place for 10 days for the Syrah and Grenache and 14 days for the Mourvèdre at a controlled temperature of 22 to 24°C. Removal of the cap and pumping over with aeration during the first 3 days of fermentation. "Inviting rose petals and pomegranate aromas are displayed on the nose. Subtle notes of sage, strawberry, dried cranberry make up the palate. The mouthfeel is plush and soft, as are the tannins and acidity." 88 points. Wine Enthusiast (December 2023)
