      Tasting Notes and Description
      The nose reveals notes of pepper and black berries, with a touch of bay leaf and black tea, confidently matched on the palate by the tannins. The finish is fresh and spicy.

      The appellation:
      The famous locality "Les Taillepieds" takes its name from its steep slope and above all from the small sharp stones on which the winegrowers "cut their feet" while digging the earth. It is located to the east/south, in the middle of the hillside, on soil made of light brown clay and abundant small pebbles. Volnay “Les Taillepieds” has little to envy of the great wines of the Côte de Nuits. It is a model of aromatic purity, precision and rigour in construction. Its mineral character, its purity, its rigour and its elegance evoke a Cistercian building which, like the abbeys, seems to defy time.

      Wine and style:
      The current style of the estate remains faithful to the naturalness and classicism of Hubert's wines, certain vintages of which required a lot of patience, but with more openness in the bouquet, and more silkiness and smoothness in the textures. Montille pay particular attention to the entire harvest, the proportion of which is constantly adapted according to the terroir, the age and characteristics of the plant material, and of course the vintage. Alcoholic fermentation takes place mainly in large wooden vats and aging in 228L piéces of which 30% is new.

      Vine cultivation:
      The estate has been practicing organic viticulture since 1995. Since 2005, biodynamics has complemented these practices that respect the soil and life. The wines are Ecocert certified.

      "Made from 80 year old vines, vinified with all the stems. A richer purple. The bouquet is stunning, offering intensity with elegance. The core of ripe fruit plus the additional perfume from whole bunches. A very fine graceful texture with tensile strength. Drink 2032-2038."
