This Champagne distinguishes itself by combining delicacy, purity and finesse. The pale yellow colour with emerald green highlights an elegant effervescence. The mineral and iodine nose opens with white flowers and a citrus cocktail. The palate is straight, chalky and intense, always carried by a chiselled texture and a long and saline finish.

It characterises and magnifies the Grand Cru d’Avize terroir. Excellent at any time of day, or night, with shell fish, white meat, fish and cheese.

Try alongside: Carpaccio of scallops, Fillet of sea bream, Risotto of lobster velouté and porcini mushrooms, Granité of pears with marrons glacés.

This skill in terms of excellence has been applied to plot selection in the Champagne region. The experience gained with grand cru wine can be detected in both the method and the character. A proportion of the wines are aged in old Burgundy barrels which have previously been used to age the Puligny-Montrachet and Montrachet wines of the Maison Olivier Leflaive and which now help to bring out the complexity of these champagne cuvées.
