      Tasting Notes and Description
Garnet colour with brilliant reflections. Aromas of dried figs, quince paste, garrigue and liquorice. A subtle and greedy fine nose.
Aromas of fresh spices (pepper) and garrigue (laurel, thyme), accompanied by a mentholated touch. An aromatic mouth with velvety tannins.
Pairing: Red meats, dish with Mediterranean herbs, stuffed vegetables, tajine, red fruit soup.

The cool Mediterranean micro-climate of Languedocs Chateau Lascaux explains the finesse and diversity of the tastes in the wines. The Garrigue (formerly known as "Classique") is made up of 75% Syrah, 20% Grenache and 5% Mourvèdre. Aged in tanks for 14 months before bottling no filtration is applied so as to retain maximum character.

Château de Lascaux gets its origins from the Cavalier family. From some 20 hectares when I took over in 1984, it has grown to its present size of almost 85 hectares of vines surrounded by 300 hectares of garrigue scrub."

The vineyard is totally integrated into a natural environment of incredibly rich biodiversity, providing it with protection and diversity of expression. All of these factors contribute to the quality and originality for which Château de Lascaux is celebrated. These same reasons also made it an unavoidable reference point in Pic Saint Loup and Languedoc.

Instantly approachable, charismatic and of real interest. The Coteaux du Languedox is a generous wine, and certainly an excellent-value Languedoc red. Southern French garrigue aromatics, unctuous juice with weight and power, all while remaining supple and fresh.

"Certified Ecocert organic and Demeter biodynamic. 80% Syrah, 20% Grenache. Destemmed, three to four days' maceration, aged in concrete tanks for five to six months. No added sulphites from harvest to bottling.

Genuinely garrigue-scented and fresh. It may be a full-bodied 14% red wine made from full-bodied varieties in the sun-blessed region of Pic St-Loup, but the hallmark of this wine is freshness. It tastes of the cool green Aleppo pines and green oaks the surround the vineyards. The fruit is dark red, tinged with elderberry and black olive, with dried oregano and grapefruit pith. The tannins are strapped tight, sinew to sinew with the fruit. A wine you could easily cool, enhancing its minty menthol breath. Drink to 2024.
