Pazo Seńorans

The Pazo and the winery owned originally by husband and wife Marisol Bueno and Javier Mareque (and now in the hands of their four children Marisol, Vicky, Javier and Santiago) began producing wine in 1989, although the estate had already started growing wine-grapes.

They work hard to create wines which faithfully reflect the land which gave them birth. They sincerely believe in the vine’s potential, from young wines to the capacity for growth which this variety has with the passage of time.

With R+D+i projects which work to improve the quality of our vineyards they always seek the highest standards of quality, using the latest cutting-edge technological advances.

For several years they have developed R+d+i projects with a number of business and other entities, especially those which specialise in the study of native varieties and in the care of vineyards and their effect on the environment.

Soil

The whole vineyard has Albariño grapes which are cultivated on a pergola system and located in different areas within a radius of about ten kilometres, and close to the sea.

The lie of the land is not uneven but it is quite unusual due to the fact that most of the soils contain xabre, a type of subsoil which results from the decomposition of granitic rock and which has great drainage capacity.

The environmental climatic conditions combined with the variety of soil types provide the grapes with their individual, fresh, aromatic character.

Harvest

After rigorous work in the field and appropriate ripening controls, it is the winery itself that decides on the date for harvesting, which is usually during the second half of September.

All the grape harvesting is done by hand; selecting bunches within the vineyard itself. Transportation to the winery is immediate, in small boxes of perforated plastic, so that the grape arrives whole and in an optimum condition for wine-making.

Later the grape juice is taken to stainless steel vats where the process of fermentation begins.
