Agnès Paquet

Located in Meloisey in Côte-d'Or, Agnès Paquet created her estate in 2000 from a plot acquired by her parents in the 1950s and then leased out.

“My family has owned a plot of land in the Auxey-Duresses appellation since the 1950s.

Since its acquisition, my ancestors have rented it to several winegrowers.

When my parents decided to sell it, I decided to run it myself and become a winemaker."

After studying business, Agnès could not bring herself to sell the plot and therefore decided to become a winemaker.  After returning to school and learning on the job, she developed her estate by acquiring new plots and creating a wine in her name and image. She divides her time between the vineyard, the cellar and marketing and has been running the business since 2000. The first vintage was produced in 2001.

In The Vineyard

The vineyard area extends over the Côte de Beaune and the Hautes Côtes de Beaune, with 13 hectares located across the appellations Bourgogne Aligoté, Chardonnay, Pinot Noir, Hautes Côtes de Beaune, Auxey-Duresses, Pommard, Chassagne-Montrachet and St-Aubin 1er cru “les Perrières”.

There is a strong attention to respecting the land, the team have implemented a vine cultivation that they describe as ‘relatively classic.’

After years of trial and error in organic farming, they decided to take the plunge in 2019 and become Ecocert certified.

Manual work in the vineyards is essential. During the green work period (May to July), the team more than doubles to 13 people.

The harvest is done by hand, in small 12 kg crates for the reds.

In the Cellar

The harvest is sorted on a vibrating table and transported to the vats by gravity, without a pump.

Indigenous yeasts are left to do their job, and the team have reduced inputs to the strict minimum, i.e. SO2 and chaptalization (when necessary).

The alcoholic and malolactic fermentation of the whites takes place in barrels during aging for 11 to 24 months depending on the vintages and cuvées.

The vinification of red wines is done in concrete vats and lasts 15 to 20 days, with a share of the entire harvest depending on the vintage.

Then the aging takes place in barrels for 10 to 12 months depending on the vintages and cuvées with 0 to 20% new barrels.
